  • 1 medium fresh pineapple, peeled, cored, and sliced into 1/2-inch thick rings or wedges
  • 1/4 cup (60 ml) raw or mild-flavored honey
  • 1/2 teaspoon ground cinnamon
  • Zest of 1 medium lemon
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon unsalted butter, melted
  • Pinch of salt
  • Optional: sprinkle of chili powder or smoked paprika

Instructions

  1. Prepare the pineapple by peeling, coring, and slicing into 1/2-inch thick rings or wedges.
  2. In a mixing bowl, whisk together honey, ground cinnamon, lemon zest, lemon juice, melted butter, and salt until smooth.
  3. Preheat grill to medium-high heat (375°F to 400°F). Clean grates well.
  4. Place pineapple slices on the grill and cook for 3-4 minutes per side, brushing generously with honey glaze after flipping.
  5. Once grilled, brush pineapple with one last coat of honey glaze while still hot and transfer to a serving platter.

Notes

Use firm, ripe pineapple to prevent mushiness. Keep grill at medium-high heat to avoid burning. Thin glaze with warm water if too thick. Use tongs to flip pineapple gently. Glaze can be made ahead and stored in fridge.
