These grilled shrimp skewers feature a sticky, sweet honey garlic marinade that caramelizes beautifully on the grill, delivering juicy, tender shrimp in under 30 minutes. Perfect for quick dinners or backyard BBQs.

Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined, tails on or off based on preference
  • 3 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish, optional)
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes to avoid burning)

Instructions

  1. Prepare the marinade by whisking together honey, minced garlic, soy sauce, olive oil, lemon juice, and red pepper flakes (if using) in a medium bowl.
  2. Add the peeled and deveined shrimp to the marinade, toss gently to coat evenly, cover, and refrigerate for 15 to 20 minutes. Do not marinate longer than 30 minutes.
  3. If using wooden skewers, soak them in water for at least 30 minutes. Thread 4 to 5 shrimp per skewer, piercing through the thickest part to keep them secure.
  4. Preheat the grill to medium-high heat (about 400°F). Clean and lightly oil the grates to prevent sticking.
  5. Grill the shrimp skewers for 2 to 3 minutes per side until shrimp turn pink and opaque with slight char marks. Avoid overcooking.
  6. Remove skewers from the grill, sprinkle with chopped fresh parsley, and serve immediately.

Notes

Do not marinate shrimp longer than 30 minutes to avoid texture changes from the lemon juice. Soak wooden skewers for 30 minutes before grilling to prevent burning. Watch for flare-ups due to honey sugars and keep a spray bottle of water handy. Avoid overcrowding skewers for even cooking. Use tongs gently to avoid piercing shrimp and losing juices. If no grill is available, broil shrimp skewers in the oven for 4-5 minutes per side or use a hot grill pan indoors.
