  • 4 skin-on salmon fillets, 6 ounces (170g) each
  • 1 bunch asparagus (about 1 pound/450g), trimmed
  • 4 tablespoons (56g) unsalted butter, divided
  • 3 cloves fresh garlic, minced
  • 1 large lemon, zested and juiced
  • 2 tablespoons (30ml) olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (optional)

Instructions

  1. Prep the ingredients: Rinse salmon and pat dry. Trim woody ends off asparagus. Mince garlic, zest and juice lemon.
  2. Season the salmon: Lightly salt and pepper both sides of the salmon fillets.
  3. Cook the asparagus: Heat 1 tablespoon olive oil and 1 tablespoon butter in a skillet over medium heat. Add asparagus, season with salt and pepper, sauté until tender but crisp, about 4-5 minutes. Remove and set aside.
  4. Sear the salmon: Add remaining olive oil to pan. Place salmon skin-side down, cook without moving for 4-5 minutes until skin is crisp. Flip and cook 2-3 more minutes until opaque and flakes easily.
  5. Make lemon garlic butter sauce: Lower heat to medium-low. Push salmon aside, add remaining butter and minced garlic. Stir gently as butter melts and garlic softens. Pour in lemon juice and zest, stir to combine.
  6. Combine and finish: Return asparagus to pan, spoon sauce over salmon and vegetables. Warm together for 1-2 minutes. Sprinkle with parsley if using.
  7. Serve immediately with a drizzle of buttery sauce.

Notes

Let salmon sit at room temperature 10-15 minutes before cooking for even cooking. Pat salmon dry to ensure crispy skin. Avoid overcrowding pan to get a good sear. Add butter after salmon is mostly cooked to prevent burning garlic. Use fresh lemon zest and juice for best flavor. Cook in batches if needed. For dairy-free, substitute butter with plant-based alternative. Optional red pepper flakes add heat.
