  • 1/2 cup breadcrumbs (gluten-free if needed)
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, room temperature
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and black pepper, to taste
  • 2 tablespoons fresh parsley, finely chopped
  • 6 cups tortilla chips
  • 2 cups shredded sharp cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup fresh salsa
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup diced red onion
  • 1 avocado, diced or sliced
  • 1/4 cup pickled jalapeños
  • 1/4 cup chopped fresh cilantro
  • Sour cream or Greek yogurt, for topping (optional)

Instructions

  1. In a large bowl, combine ground turkey, breadcrumbs, grated Parmesan, beaten egg, minced garlic, smoked paprika, ground cumin, chili powder, salt, pepper, and chopped parsley. Mix gently but thoroughly without overworking.
  2. Shape the mixture into 1-inch meatballs, about 20-24 pieces, using wet hands to prevent sticking. Set aside on a plate or baking sheet.
  3. Heat a large skillet over medium heat with a drizzle of oil. Cook meatballs in batches, turning frequently until browned on all sides and cooked through (internal temperature 165°F). This takes about 10-12 minutes. Alternatively, bake at 400°F for 15-18 minutes.
  4. On a large oven-safe platter or dish, spread 6 cups of tortilla chips evenly. Scatter cooked turkey meatballs over the chips. Sprinkle 2 cups shredded cheddar cheese on top. Add 1 cup black beans and sliced black olives.
  5. Place the nacho bowl under a preheated broiler or in a 400°F oven until the cheese melts and bubbles, about 5-7 minutes. Watch closely to prevent burning.
  6. Remove from oven and top with diced avocado, pickled jalapeños, diced red onion, fresh salsa, chopped cilantro, and dollops of sour cream or Greek yogurt.
  7. Serve immediately while hot.

Notes

Do not overmix meatball mixture to keep meatballs tender. Brown meatballs well for flavor. Melt cheese just before serving to avoid soggy chips. Serve chips and toppings separately if prepping ahead. Meatballs can be baked or pan-fried. Use gluten-free breadcrumbs and chips for gluten-free version. Leftover meatballs freeze well for up to 3 months.
