  • 12 oz flank steak or sirloin, thinly sliced against the grain
  • 2 tablespoons olive oil or avocado oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 cups fresh mixed greens (baby spinach, arugula, or spring mix)
  • 1/2 cup cherry tomatoes, halved (optional)
  • 1/4 cup sliced red onion
  • Your favorite dressing or a simple drizzle of balsamic glaze

Instructions

  1. In a medium saucepan over low heat, melt 4 tablespoons of unsalted butter until bubbling slightly (3-4 minutes).
  2. Add the entire bag of mini marshmallows and stir constantly until smooth and fully melted (about 5 minutes). Remove from heat and stir in 1 teaspoon vanilla extract if using.
  3. Immediately add 6 cups crispy rice cereal and 2 cups Lucky Charms cereal to the melted marshmallow mixture. Gently fold with a wooden spoon or heatproof spatula until cereals are evenly coated, being careful not to crush the Lucky Charms.
  4. Lightly grease a 9×13 inch baking pan with butter or non-stick spray. Transfer the mixture into the pan and press down firmly but gently using a buttered spatula or hands (use parchment paper to avoid sticking). Let cool and set at room temperature for about 30 minutes or refrigerate for 15 minutes if in a hurry.
  5. While the treats set, toss the thinly sliced steak with 2 tablespoons olive oil, 1 teaspoon garlic powder, 1 teaspoon smoked paprika, salt, and pepper.
  6. Heat a skillet over medium-high heat until hot. Add steak strips in a single layer without crowding. Cook 2-3 minutes per side for medium-rare or longer for desired doneness. Remove from heat and set aside.
  7. Assemble the nourish bowl by laying a bed of fresh mixed greens in serving bowls. Slice the rice crispy treat into squares or rectangles and place alongside the greens.
  8. Add cherry tomatoes and red onion slices. Top with warm steak strips.
  9. Drizzle your favorite dressing or balsamic glaze over everything and serve immediately.
