A quick and easy dinner bowl featuring juicy turkey meatballs, fresh veggies, and a tangy yogurt-dill sauce, perfect for festive gatherings or cozy weeknights.

  • 1 lb (450g) ground turkey (preferably lean, 93% lean for juiciness)
  • 1/2 cup (50g) breadcrumbs (use gluten-free if needed)
  • 1 large egg, room temperature
  • 2 cloves garlic, minced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 2 cups cooked quinoa or brown rice
  • 1 cup shredded kale or spinach
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup shredded carrots
  • 1/4 cup plain Greek yogurt (or dairy-free alternative)
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tbsp fresh dill, chopped (or 1 tsp dried)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. In a large mixing bowl, combine ground turkey, breadcrumbs, egg, minced garlic, chopped parsley, Worcestershire sauce, salt, black pepper, and smoked paprika if using. Mix gently until just combined.
  3. Use a tablespoon or cookie scoop to portion the mixture into about 18-20 meatballs. Roll each into smooth, uniform balls.
  4. Arrange meatballs on the prepared baking sheet, leaving space between each. Bake for 18-20 minutes or until cooked through and lightly golden, reaching an internal temperature of 165°F (74°C).
  5. While meatballs bake, cook quinoa or brown rice according to package instructions. Fluff with a fork and set aside. Chop kale or spinach, halve cherry tomatoes, and shred carrots.
  6. In a small bowl, whisk together Greek yogurt, lemon juice, Dijon mustard, chopped dill, salt, and pepper to make the sauce.
  7. Assemble the bowl by layering quinoa or rice, kale/spinach, cherry tomatoes, and shredded carrots. Top with warm turkey meatballs and drizzle with the yogurt-dill sauce.
  8. Serve immediately, optionally garnished with extra fresh herbs or a squeeze of lemon.

Notes

Do not overmix the meatball mixture to keep them tender. Use a cookie scoop for uniform meatballs. Tent with foil if browning too fast. Let meatballs rest a few minutes after baking to redistribute juices. Swap quinoa with brown rice or other grains. For dairy-free, substitute Greek yogurt with coconut or almond yogurt.
