A hearty and flavorful dish combining caramelized sweet potatoes, savory sausage, and a sticky honey garlic sauce. Perfect for weeknight dinners or cozy gatherings.

Ingredients

Scale
  • 1 package of sausage (Italian, smoked, or spicy), sliced into bite-sized pieces
  • 2 medium-sized sweet potatoes, peeled and diced into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (low-sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes into 1-inch cubes. Toss them with olive oil, salt, and pepper, then spread evenly on a baking sheet.
  3. Roast the sweet potatoes for 25-30 minutes, flipping halfway through, until golden brown and tender.
  4. While the sweet potatoes roast, heat a large skillet over medium heat. Add a drizzle of olive oil and cook the sausage pieces until browned and cooked through, about 10-12 minutes. Remove from the skillet and set aside.
  5. In the same skillet, add the minced garlic and sauté for 1-2 minutes until fragrant. Reduce the heat to low and stir in honey, soy sauce, apple cider vinegar, and red pepper flakes. Simmer for 3-5 minutes until slightly thickened.
  6. Add the roasted sweet potatoes and cooked sausage back to the skillet with the sauce. Toss to coat everything evenly and let it heat through for 2-3 minutes.
  7. Transfer the dish to a serving platter and sprinkle with fresh parsley if desired. Serve warm and enjoy!

Notes

[‘Spread sweet potatoes in a single layer on the baking sheet for even roasting.’, ‘Use fresh garlic for maximum flavor.’, ‘Adjust the sweetness of the sauce by reducing honey and adding more soy sauce or vinegar.’, ‘Keep an eye on the sauce as it thickens quickly.’, ‘Experiment with different types of sausage for varied flavors.’]
