  • 2 tablespoons olive oil
  • Juice and zest of 1 large lemon
  • 2 cloves garlic, minced

  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup cooked corn kernels (fresh, frozen, or canned)
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced ripe tomatoes (seeds removed)
  • 1/2 cup finely chopped red onion
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup chopped fresh cilantro (optional)
  • 1 avocado, diced or mashed
  • 12 tablespoons fresh lime juice

Instructions

  1. Marinate the chicken: In a bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper. Add chicken breasts and toss to coat evenly. Let marinate for at least 10 minutes or up to 2 hours in the fridge.
  2. Cook the chicken: Heat a large non-stick skillet or grill pan over medium-high heat. Add chicken and cook for 6-7 minutes per side until internal temperature reaches 165°F (74°C) and chicken is golden and fragrant. Remove from heat and let rest for 5 minutes, then dice into bite-sized pieces.
  3. Prepare the veggie and bean layers: Rinse and drain black beans and corn. Dice tomatoes, red onion, and avocado. Toss avocado with lime juice to prevent browning.
  4. Assemble the seven-layer party bowl in a large serving dish in this order: black beans, cooked corn kernels, diced lemon-herb chicken, shredded cheddar cheese, diced tomatoes and red onion, sour cream or Greek yogurt dolloped and gently spread, fresh cilantro and avocado on top.
  5. Garnish with extra lemon zest or smoked paprika if desired. Serve immediately with tortilla chips, pita wedges, or as a side dish.
