Ingredients

Scale
  • 14 ounces (400g) firm tofu, pressed and cubed
  • 1 tablespoon vegetable oil or peanut oil
  • 1 red bell pepper, sliced thinly
  • 1 cup broccoli florets, bite-sized
  • 1 medium carrot, julienned or thinly sliced
  • 1 small zucchini, sliced into half-moons
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • 2 green onions, chopped
  • ½ cup creamy peanut butter
  • 3 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • ¼ to ½ cup warm water
  • Optional: pinch of red pepper flakes or a dash of sriracha

Instructions

  1. Press and cube the tofu: Wrap the tofu block in a clean kitchen towel and place something heavy on top for 15-20 minutes to squeeze out excess moisture. Cut into 1-inch cubes.
  2. Prep the vegetables: Wash and slice the bell pepper, broccoli, carrot, zucchini, garlic, ginger, and green onions.
  3. Make the peanut sauce: Whisk together peanut butter, soy sauce, honey or maple syrup, rice vinegar, and sesame oil in a mixing bowl. Slowly add warm water until smooth and pourable. Add red pepper flakes if desired.
  4. Cook the tofu: Heat vegetable oil in a skillet over medium-high heat. Add tofu cubes in a single layer and cook without stirring for 3-4 minutes until golden brown. Flip and cook other sides until crispy. Transfer to a plate.
  5. Sauté the vegetables: In the same skillet, cook garlic and ginger for 30 seconds until fragrant. Add bell pepper, broccoli, carrot, and zucchini. Stir-fry for 5-7 minutes until tender-crisp.
  6. Combine and coat: Return tofu to skillet with vegetables. Pour peanut sauce over and toss gently to coat. Cook for 2-3 minutes until sauce thickens slightly.
  7. Garnish and serve: Remove from heat, sprinkle chopped green onions on top, and serve immediately with steamed jasmine rice or your favorite grain.

Notes

Press tofu well to get crispy edges. Use firm or extra-firm tofu to avoid sogginess. Adjust peanut sauce thickness with warm water. Avoid overcrowding the pan when cooking tofu. Add lime juice for extra zing. Sauce can be made ahead and stored in the fridge for up to a week.
