  • 3 tablespoons unsalted butter (melted and slightly cooled)
  • 1 teaspoon vanilla extract
  • ½ cup (90 g) semi-sweet chocolate chips
  • Butter or non-stick spray for the skillet
  • Maple syrup, fresh berries, or whipped cream (optional, for serving)

Instructions

  1. In a medium bowl, whisk together the flour, baking powder, sugar, and salt until evenly combined.
  2. In another bowl, beat the egg with the milk and melted butter. Add vanilla extract and whisk until smooth.
  3. Slowly pour the wet ingredients into the dry ingredients, folding gently with a spatula. Do not overmix; some lumps are fine.
  4. Fold in the chocolate chips gently into the batter.
  5. Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or non-stick spray.
  6. If using, place the heart-shaped mold on the skillet. Pour about ¼ cup (60 ml) batter into the mold or directly onto the skillet for freeform pancakes.
  7. Cook until bubbles form on the surface and edges look set, about 2-3 minutes. Remove the mold if used, then flip the pancake and cook for another 1-2 minutes until golden and cooked through.
  8. Transfer cooked pancakes to a plate or cooling rack to keep warm. Repeat with remaining batter, greasing the pan as needed.
  9. Serve warm with maple syrup, fresh berries, or whipped cream as desired.

Notes

Do not overmix the batter to keep pancakes fluffy. Use room temperature eggs and milk for better rising. If batter is too thick, add milk a tablespoon at a time. Control heat to avoid burning. Toss chocolate chips in a teaspoon of flour before folding to prevent sinking. Pancakes can be made freeform if no mold is available.
