These fluffy muffins combine the classic flavors of garlic and rosemary with the light texture of focaccia, making them perfect for any occasion.

  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 4 cloves garlic, roasted and mashed
  • 1 tablespoon fresh rosemary, finely chopped
  • 1/4 cup (60ml) olive oil
  • 1 cup (240ml) milk (whole milk or dairy-free alternatives like almond or oat milk)
  • 1 egg
  • Parmesan cheese (optional, for topping)

Instructions

  1. Preheat your oven to 400°F (200°C). Wrap garlic cloves in foil with a splash of olive oil and roast for 20 minutes until soft and fragrant. Let cool and mash into a paste.
  2. Set your oven to 375°F (190°C) and grease your muffin tin or line it with paper liners.
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. In a smaller bowl, whisk milk, olive oil, and egg. Stir in mashed garlic and chopped rosemary.
  5. Gradually fold the wet ingredients into the dry ingredients using a wooden spoon. Mix until just combined.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle tops with Parmesan cheese if desired.
  7. Bake for 18-22 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Let the muffins cool for 5 minutes in the tin before transferring to a wire rack.
