A refreshing and easy-to-make salad featuring crisp cucumbers and creamy avocados tossed in a tangy lime dressing, perfect for summer meals or light dinners.

  • 2 medium cucumbers, peeled or unpeeled, sliced or diced
  • 2 medium ripe avocados, diced
  • 1/4 cup finely diced red onion
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon chili flakes (optional)
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cucumbers. Peel if preferred, then slice into 1/4 inch (6mm) thick rounds or half-moons. Place in a mixing bowl.
  2. Cut avocados in half, remove pits, and dice into roughly 1-inch (2.5 cm) cubes. Gently add to the bowl with cucumbers.
  3. Finely dice 1/4 cup red onion and chop 2 tablespoons fresh cilantro. Add both to the salad bowl. Soak onion in cold water for 5 minutes if a milder flavor is desired, then drain.
  4. In a small bowl, whisk together lime juice, olive oil, honey, chili flakes (if using), salt, and pepper. Adjust sweetness or salt to taste.
  5. Pour the dressing over the salad ingredients. Gently toss using folding motions to coat evenly without mashing the avocado.
  6. Let the salad rest for 5-10 minutes at room temperature to allow flavors to meld. Serve immediately for best freshness.

Notes

Use ripe but firm avocados to avoid mushy texture. Whisk honey and lime juice first before slowly adding olive oil to emulsify the dressing. Prepare salad close to serving time to prevent avocado browning. Store avocado separately if prepping ahead.
