  • ½ cup (75 g) pomegranate seeds
  • 1 oz (28 g) dark chocolate (70% cocoa or higher)
  • 1 tsp (5 ml) honey or maple syrup (optional)
  • ½ tsp (2.5 ml) vanilla extract (optional)
  • 2 tbsp (15 g) chopped nuts (walnuts or pistachios, optional)
  • 1 tsp (5 g) chia seeds or flaxseeds (optional)

Instructions

  1. Prepare the Yogurt Base: In a bowl, gently whisk 1 cup (240 ml) of Greek yogurt with ½ teaspoon (2.5 ml) of vanilla extract and, if desired, 1 teaspoon (5 ml) of honey or maple syrup. Whisk just enough to combine without making the yogurt runny.
  2. Seed the Pomegranate: Cut a fresh pomegranate into quarters and tap the back with a wooden spoon over a bowl to release the seeds. Remove any white pith bits. Alternatively, use pre-packaged pomegranate seeds.
  3. Grate the Dark Chocolate: Using a microplane or small grater, shave 1 ounce (28 g) of dark chocolate into thin curls or flakes. Keep the chocolate chilled before grating to prevent melting.
  4. Assemble the Bowl: Spoon the vanilla-yogurt mixture into a serving bowl. Sprinkle the pomegranate seeds evenly over the top, then add the dark chocolate shavings. Optionally, add chopped nuts and a sprinkle of chia or flaxseeds.
  5. Final Touches: Gently swirl the bowl or leave layered for an elegant look. Serve immediately to enjoy the fresh crunch and melting chocolate.

Notes

Assemble the bowl just before serving to prevent pomegranate seeds from releasing juice and making the yogurt watery. Keep dark chocolate chilled before grating to avoid melting. Use thick Greek yogurt for best texture. Store components separately if prepping ahead.
