  • 1 teaspoon pure vanilla extract
  • 1 tablespoon honey or maple syrup (optional)
  • 1 cup (150g) fresh strawberries, hulled and sliced
  • 1 teaspoon fresh lemon juice
  • 34 crunchy cookies (such as biscotti, shortbread, or oatmeal cookies), roughly crumbled
  • Optional: 1 tablespoon chopped toasted nuts (almonds or walnuts)
  • Optional: A sprinkle of cinnamon or cocoa powder

Instructions

  1. Prepare the Yogurt Base (5 minutes): In a mixing bowl, combine 1 cup (240g) of full-fat Greek yogurt with 1 teaspoon of pure vanilla extract. Stir gently until smooth and fragrant. If desired, add 1 tablespoon of honey or maple syrup and mix well.
  2. Slice the Strawberries (3 minutes): Rinse 1 cup (150g) of fresh strawberries under cold water. Pat dry. Hull and slice into halves or quarters. Toss the slices gently with 1 teaspoon of fresh lemon juice.
  3. Prepare the Cookie Toppings (2 minutes): Crumble 3-4 crunchy cookies (about 50g) roughly using hands or a spoon. Optionally, toast 1 tablespoon of chopped nuts in a dry pan over medium heat for 2 minutes until fragrant, then cool.
  4. Assemble the Bowl (2 minutes): Spoon the vanilla yogurt mixture into a serving bowl or glass jar. Arrange the sliced strawberries on top. Sprinkle the crumbled cookies and toasted nuts evenly over the berries. Dust with cinnamon or cocoa powder if desired.
  5. Final Touches and Serve: Serve immediately for best crunch. If prepping ahead, keep yogurt and toppings separate and combine just before eating.

Notes

Use full-fat Greek yogurt for best creaminess. Crumble cookies just before serving to keep them crunchy. If yogurt is too thick, loosen with a splash of milk. For dairy-free, swap Greek yogurt with coconut yogurt and use vegan cookies. Store yogurt and toppings separately if prepping ahead.
