  • 1 cup fresh spinach leaves, washed and patted dry (about 30g, optional)
  • 1 teaspoon freshly squeezed lemon juice
  • ¼ teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Prepare the veggies: Wash and dry spinach leaves thoroughly. Grate carrots finely, dice red bell pepper and cucumber into small pieces, and slice green onions thinly. Set aside.
  2. Make the cream cheese spread: In a mixing bowl, stir softened cream cheese with lemon juice, garlic powder, salt, and pepper until smooth and creamy.
  3. Combine veggies with cream cheese: Fold diced veggies and green onions into the cream cheese mixture. If using spinach, chop finely and mix in. Ensure filling is evenly coated but not watery.
  4. Spread the filling: Lay a tortilla flat and spread a generous, even layer of the cream cheese and veggie mixture over the surface, leaving about ½ inch border around edges.
  5. Roll up tightly: Starting from one edge, roll the tortilla into a tight cylinder, keeping the roll snug.
  6. Chill the roll: Wrap the rolled tortilla tightly in plastic wrap or parchment paper and refrigerate for at least 20 minutes to firm up.
  7. Slice into pinwheels: Remove from fridge, unwrap, and slice into 1-inch thick pinwheels using a sharp serrated knife. Arrange on a platter with spiral pattern facing up.
  8. Serve immediately or store: Best served fresh but can be refrigerated covered for up to 24 hours.
