Instructions

  1. Cook 2 cups of brown rice or quinoa according to package instructions (about 40-45 minutes for rice, 15 minutes for quinoa). Set aside to cool slightly.
  2. In a medium bowl, combine rinsed and drained black beans, diced red onion, minced garlic, and jalapeño. Stir in ground cumin, smoked paprika, salt, and pepper.
  3. Squeeze the juice of one lime over the bean mixture and drizzle with olive oil. Toss in chopped cilantro and mix gently to combine all flavors.
