A quick and easy summer snack featuring crisp fresh radishes paired with a luscious homemade creamy herb butter spread on toasted baguette slices. Perfect for light, refreshing appetizers or casual gatherings.

  • 2 tablespoons fresh chives, finely chopped
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, finely chopped (optional)

  • Salt and freshly ground black pepper, to taste
  • 1 baguette or crusty French bread, sliced into 1/2-inch (1.3 cm) rounds
  • 2 tablespoons olive oil (for brushing the bread)
  • 810 fresh radishes, thinly sliced (red or watermelon radishes)
  • Flaky sea salt, for sprinkling
  • Freshly ground black pepper, for seasoning
  • Optional garnish: fresh herbs or edible flowers

Instructions

  1. Make the Herb Butter (10 minutes): In a mixing bowl, add the softened unsalted butter. Use a fork or hand mixer to whip it until light and fluffy. Stir in the finely chopped chives, parsley, thyme (if using), lemon zest, salt, and pepper. Mix thoroughly to combine all the flavors. Taste and adjust seasoning if needed. Cover and refrigerate until ready to use.
  2. Prepare the Crostini (10 minutes): Preheat your oven to 375°F (190°C). Slice the baguette into 1/2-inch (1.3 cm) thick rounds. Place the slices on a baking sheet and brush each lightly with olive oil on both sides. Toast in the oven for 8-10 minutes, flipping halfway through, until golden and crisp but not burnt.
  3. Slice the Radishes (5 minutes): While the bread toasts, thinly slice the radishes using a sharp knife or mandoline. Aim for slices about 1/8-inch (3 mm) thick.
  4. Assemble the Crostini (5 minutes): Remove the toasted bread from the oven and cool slightly. Spread a generous layer of the creamy herb butter on each slice. Top with a few radish slices, arranging them in overlapping layers. Sprinkle with flaky sea salt and freshly ground black pepper. Add a small herb leaf or edible flower for garnish if desired.
  5. Serve Immediately: Enjoy fresh radish crostini right after assembling to keep the bread crisp and radishes fresh.

Notes

Make the herb butter a day in advance and refrigerate. Toast bread just before serving and slice radishes last minute to keep them crisp. If radishes are spicy, soak slices in cold water for 5 minutes to mellow the bite. Use softened butter for best whipping results. Thin radish slices are key for texture balance. Avoid microwaving crostini to prevent sogginess.
