  • 1 English cucumber, sliced into ½ inch thick rounds
  • 4 oz (115 g) softened cream cheese
  • 1 teaspoon fresh lemon juice
  • Freshly cracked black pepper, to taste
  • Sea salt, a pinch
  • Thinly sliced smoked salmon (about 4 oz)
  • 2 tablespoons fresh dill, finely chopped
  • Capers (optional, a few for garnish)

Instructions

  1. Rinse and dry the cucumber well. Slice into thick rounds about ½ inch thick.
  2. Lightly sprinkle sea salt on each cucumber slice and set aside on a paper towel-lined plate for about 10 minutes to draw out excess moisture.
  3. In a small bowl, combine softened cream cheese, lemon juice, and black pepper. Mix until smooth and creamy.
  4. Pat the cucumber slices dry with paper towels to remove any released moisture.
  5. Spread a generous teaspoon of the cream cheese mixture on each cucumber slice.
  6. Gently place a thin slice of smoked salmon on top of the cream cheese layer. Fold or roll the salmon for a neat presentation if desired.
  7. Sprinkle finely chopped dill evenly over each bite. Add a few capers if using, and finish with an optional tiny squeeze of lemon juice.
  8. Serve immediately to keep cucumber crisp and dill vibrant.

Salt cucumbers lightly to draw out moisture and prevent sogginess. Use softened cream cheese for easy spreading. Assemble just before serving to keep bites fresh and crisp.
