  • 1 cup (90g) rolled oats
  • 2 cups (480ml) water or milk (dairy or plant-based)
  • 1 medium orange, peeled and segmented
  • ½ medium grapefruit, peeled and segmented
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon chia seeds
  • 2 tablespoons toasted almonds, chopped
  • ½ teaspoon vanilla extract
  • Pinch of sea salt
  • A few fresh mint leaves, finely chopped (optional)

Instructions

  1. In a medium saucepan, combine 1 cup (90g) rolled oats with 2 cups (480ml) water or milk. Bring to a gentle boil over medium heat, stirring occasionally to prevent sticking. Cook for about 7-8 minutes until oats are thick and creamy but still hold their shape. Add a splash of milk or water if too thick.
  2. Remove saucepan from heat and stir in ½ teaspoon vanilla extract, a pinch of sea salt, and 1 tablespoon honey or maple syrup if using. Mix well.
  3. While oats cook, peel and segment the orange and grapefruit using a sharp knife to remove pith and separate clean sections. Place segments in a mixing bowl. Add 1 teaspoon chia seeds and finely chopped fresh mint leaves if desired. Toss gently to combine.
  4. Heat a dry skillet over medium heat. Add 2 tablespoons chopped almonds and toast for 2-3 minutes, stirring frequently until golden brown and fragrant. Remove from heat and set aside.
  5. Spoon warm oatmeal into a serving bowl. Top generously with the citrus mixture and sprinkle toasted almonds over the top. Drizzle extra honey or maple syrup if desired.
  6. Garnish with a few fresh mint leaves for color and freshness.

Notes

Use rolled oats from Bob’s Red Mill for best texture. Choose firm, ripe citrus fruits for juiciness without bitterness. For vegan version, substitute honey with maple syrup and use plant-based milk. Toast nuts just before serving for best crunch. If oats thicken too much after cooking, stir in a splash of milk or water before serving. Segment citrus carefully to avoid bitterness from pith.
