  • 2 cups unsweetened coconut milk (480ml)
  • 1/4 cup toasted shredded coconut (20g)
  • 1/2 cup fresh strawberries, sliced (75g)
  • 1/2 cup fresh raspberries (60g)
  • 2 tablespoons honey or maple syrup (30ml)
  • 1 teaspoon vanilla extract (5ml)
  • 1 teaspoon fresh lime zest
  • 2 tablespoons chopped pistachios or almonds (15g), optional
  • Pinch of sea salt

Instructions

  1. Toast the shredded coconut: Heat a non-stick skillet over medium heat. Add the shredded coconut in an even layer. Stir frequently for about 3-5 minutes until golden brown and fragrant. Watch closely to avoid burning. Transfer to a plate to cool.
  2. Cook the oatmeal: In a medium saucepan, combine rolled oats, coconut milk, and a pinch of sea salt. Bring to a gentle simmer over medium heat, stirring occasionally. Cook for 8-10 minutes until oats are tender and mixture is creamy.
  3. Add flavorings: Remove oatmeal from heat. Stir in vanilla extract, honey or maple syrup, and fresh lime zest. Mix well and adjust sweetness to taste.
  4. Prepare fruit and nuts: While oatmeal cooks, slice strawberries and measure raspberries. Chop nuts if using.
  5. Assemble the bowl: Spoon oatmeal into serving bowls. Top with fresh strawberries, raspberries, toasted coconut, and nuts.
  6. Final touch: Drizzle extra honey or maple syrup on top if desired. Serve warm immediately.

Notes

Toast coconut over medium heat and stir frequently to avoid burning. Use gluten-free oats for a gluten-free version. Adjust sweetness to taste. If oatmeal thickens too much, stir in a splash of coconut milk or water to loosen. Prep toasted coconut and chop fruit the night before for quicker mornings.
