  • A handful of fresh berries (optional, e.g., strawberries or blueberries)
  • A drop or two of vanilla extract (optional)

Instructions

  1. Measure 1 cup (225g) of small-curd cottage cheese into a mixing bowl. Gently whisk or blend for 30 seconds if a smoother texture is desired, but avoid over-blending.
  2. Peel and slice one medium banana into thin rounds about ¼-inch thick.
  3. Spoon the cottage cheese into a serving bowl or glass jar, smoothing the top gently.
  4. Evenly distribute the banana slices over the cottage cheese, leaving a small edge.
  5. Sprinkle ½ cup (50g) of granola evenly over the banana slices.
  6. Add optional toppings: drizzle 1 tablespoon of honey or maple syrup, sprinkle 1 teaspoon of chia seeds, and add a handful of fresh berries if desired.
  7. Add a drop or two of vanilla extract on top if using. Serve immediately or refrigerate up to 2 hours before serving.
