A refreshing and easy summer salad combining sweet watermelon, salty feta, and fresh mint, perfect as a light lunch or side dish.

Ingredients

  • 4 cups watermelon, cubed (seedless preferred)
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh mint leaves, roughly chopped
  • 2 tablespoons extra virgin olive oil (optional)
  • Juice of 1 lime, freshly squeezed
  • Pinch of sea salt, to taste
  • Light sprinkle of freshly ground black pepper (optional)

Instructions

  1. Cut off the rind of the watermelon and slice into 1-inch thick slabs, then cut into 1-inch cubes.
  2. Crumble the feta cheese into small chunks about 1/3-inch pieces.
  3. Rinse and roughly chop the fresh mint leaves.
  4. In a large mixing bowl, combine the watermelon cubes, crumbled feta, and chopped mint.
  5. Add 2 tablespoons of extra virgin olive oil and the juice of one lime. Toss gently to combine without smashing the watermelon.
  6. Sprinkle a pinch of sea salt and a light grind of black pepper over the salad. Toss briefly to distribute seasoning evenly.
  7. Optional: Chill the salad in the refrigerator for 10-15 minutes before serving to let flavors meld.

Notes

Add toasted pine nuts or pistachios for crunch. For a dairy-free version, substitute feta with vegan cheese or omit and add more nuts. Avoid over-tossing to prevent watermelon from becoming watery. Prepare just before serving or chill briefly for best flavor.
