A quick and easy summer refreshment featuring fresh watermelon and mint, balanced with lime juice and a touch of sweetness. Perfect for cooling down on hot days and ideal for gatherings.

Ingredients

  • 4 cups fresh watermelon, cubed (about 600 grams)
  • 1012 fresh mint leaves
  • 2 tablespoons fresh lime juice
  • 2 cups cold water (480 ml)
  • 23 tablespoons granulated sugar or honey (optional, adjust to taste)
  • Ice cubes for serving

Instructions

  1. Remove the rind and cut about 4 cups of watermelon into cubes, removing any seeds if not using seedless watermelon.
  2. Place the watermelon cubes and fresh mint leaves into a blender. Blend on high for 30-45 seconds until smooth and vibrant red.
  3. Pour the blended watermelon through a fine mesh strainer into a large bowl or pitcher. Use a spoon to press the pulp gently, extracting as much juice as possible. Discard the solids.
  4. Stir in 2 tablespoons of fresh lime juice. Add 2-3 tablespoons of sugar or honey, tasting as you go to get the desired sweetness.
  5. Pour in 2 cups of cold water and stir well to dilute the mixture.
  6. Refrigerate for at least 30 minutes before serving to let flavors meld.
  7. Serve over ice cubes in glasses, garnished with a sprig of mint or a lime wheel if desired.

Notes

Gently bruise mint leaves before blending to release oils without bitterness. Straining is important for a smooth texture. Adjust sweetness gradually to avoid oversweetening. Chill well before serving. For a twist, add sparkling water before serving or substitute lime with lemon juice.
