Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your baking pan by spraying lightly with non-stick spray or lining with parchment paper. If using mini muffin tins, fill each cup about 3/4 full.
  2. In a large bowl, combine the melted butter and granulated sugar, whisking until smooth and glossy (about 2 minutes). Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  4. Gently fold the dry mixture into the wet mixture using a spatula. Stop mixing as soon as you see no more flour streaks to avoid overmixing.
