  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/4 cup honey
  • 1/3 cup BBQ sauce
  • 1 tbsp soy sauce
  • 1 tsp smoked paprika
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • Fresh cilantro (optional)

Instructions

  1. In a mixing bowl, whisk together honey, BBQ sauce, soy sauce, and smoked paprika. Set aside.
  2. Heat a large skillet over medium heat. Add the butter and let it melt. Stir in the minced garlic and cook until fragrant, about 30 seconds.
  3. Add the ground beef to the skillet. Cook for 5-7 minutes, breaking it up with a wooden spoon as it browns evenly.
  4. Pour the prepared honey BBQ sauce into the skillet with the cooked beef. Stir well to coat the meat evenly. Let it simmer for 3-5 minutes until the sauce thickens slightly.
  5. Heat the tortillas in a dry skillet for about 10 seconds per side, or wrap them in a damp paper towel and microwave for 15-20 seconds.
  6. Lay out the warm tortillas. Add a scoop of the honey BBQ beef to each tortilla. Top with shredded lettuce, diced tomatoes, shredded cheese, a dollop of sour cream, and a sprinkle of fresh cilantro.
  7. Serve immediately while warm.

Notes

Toast tortillas for extra flavor. Adjust sauce sweetness with vinegar or lemon juice. Add cayenne pepper for spice.
