A quick and easy one-pan recipe featuring savory garlic butter, smoky sausage, and hearty orzo pasta. Perfect for busy weeknights or cozy dinners.

  • 1 cup orzo
  • 8 ounces smoked sausage (kielbasa, andouille, or chicken sausage), sliced into bite-sized pieces
  • 2 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 3 cups chicken broth (about 700 ml)
  • 1/2 cup grated Parmesan cheese (50 g)
  • 2 cups fresh baby spinach, washed and roughly chopped
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Slice the sausage into bite-sized pieces. Mince the garlic, and wash and roughly chop the spinach.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sausage and sauté until browned and crispy, about 5-7 minutes. Remove the sausage from the pan and set aside.
  3. In the same skillet, melt the butter over medium-low heat. Add the minced garlic and sauté for 1-2 minutes, stirring frequently, until fragrant.
  4. Stir the uncooked orzo into the skillet with the garlic butter. Toast the orzo for 1-2 minutes to enhance its nutty flavor.
  5. Pour in 3 cups of chicken broth and sprinkle a pinch of salt and pepper. Stir well and bring to a gentle boil.
  6. Reduce the heat to low and let the orzo simmer, stirring occasionally, for about 10-12 minutes. Keep an eye on it to prevent sticking.
  7. Once the orzo is tender and has absorbed most of the liquid, stir the cooked sausage and spinach into the skillet. Cook for another 2-3 minutes until the spinach is wilted.
  8. Remove the skillet from the heat and stir in ½ cup of grated Parmesan cheese. Taste and adjust seasoning with additional salt, pepper, or red pepper flakes as desired.
  9. Serve hot and enjoy!
