This Garlic Butter Steak recipe combines simplicity, flavor, and elegance, making it perfect for cozy family dinners or special occasions.

Ingredients

  • Ribeye, sirloin, or filet mignon steak
  • Kosher salt
  • Freshly ground black pepper
  • Fresh garlic cloves
  • Unsalted butter
  • Olive oil
  • Fresh thyme
  • Fresh parsley

Instructions

  1. Bring the steak to room temperature: Take the steak out of the fridge at least 30 minutes before cooking to ensure even cooking.
  2. Season the steak: Pat the steak dry with paper towels, then generously season both sides with kosher salt and freshly ground black pepper.
  3. Heat the skillet: Place your cast iron skillet on medium-high heat and let it get hot. Add a tablespoon of olive oil—when you see shimmering, it’s ready.
  4. Sear the steak: Place the steak in the skillet and let it cook undisturbed for 3-4 minutes per side. Don’t move it around; this is how you achieve that golden-brown crust.
  5. Make the garlic butter: While the steak is cooking, mix softened butter with minced garlic, chopped fresh thyme, and a pinch of salt. Set aside.
  6. Baste the steak: Lower the heat to medium. Add the garlic butter to the skillet and spoon it over the steak as it cooks. This step adds incredible flavor and ensures the steak stays juicy.
  7. Check for doneness: Use a meat thermometer to check the internal temperature. For medium-rare, aim for 135°F (57°C); for medium, go for 145°F (63°C).
  8. Rest the steak: Remove the steak from the skillet and let it rest on a cutting board for 5-7 minutes. This allows the juices to redistribute and keeps the steak moist.
  9. Slice and serve: Cut the steak against the grain into slices, garnish with fresh parsley, and serve warm with your favorite sides.

Notes

Bring steak to room temperature before cooking for even doneness. Use a meat thermometer for precise cooking. Rest the steak after cooking to retain juices.
