  • Bone-in, skin-on chicken thighs or drumsticks
  • 1 lb baby potatoes, halved
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Lemon wedges (optional, for serving)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper or foil.
  2. Pat the chicken thighs or drumsticks dry with paper towels, then season generously with salt, pepper, and paprika.
  3. In a mixing bowl, combine halved baby potatoes, olive oil, minced garlic, dried thyme, and a pinch of salt. Mix well until coated.
  4. Place the chicken evenly spaced on the sheet pan, then spread the potatoes around them in a single layer.
  5. Bake in the preheated oven for 35-40 minutes, flipping the chicken and potatoes halfway through. Ensure the chicken reaches an internal temperature of 165°F (74°C).
  6. Sprinkle freshly grated Parmesan cheese over the chicken and potatoes during the last 5 minutes of cooking, then return to the oven until the cheese is melted and golden.
  7. Remove from the oven and sprinkle with chopped parsley. Serve immediately with lemon wedges on the side.

Notes

For extra crispy chicken skin, broil for 1-2 minutes at the end of cooking. Use fresh Parmesan for the best flavor and texture.
