A creamy, flavorful dish featuring tender chicken and melt-in-your-mouth potatoes, all cooked effortlessly in a crockpot with garlic and parmesan.

Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1.5 pounds baby potatoes or Yukon gold potatoes, halved
  • 4 garlic cloves, minced
  • 1 cup freshly grated parmesan cheese, divided
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Season the chicken breasts generously with salt, pepper, and Italian seasoning. Set aside.
  2. Wash and halve the baby potatoes (or quarter them if larger). Sprinkle with a pinch of salt.
  3. In a mixing bowl, whisk together heavy cream, chicken broth, minced garlic, melted butter, and half of the grated parmesan cheese.
  4. Place the potatoes at the bottom of the crockpot, followed by the chicken breasts on top.
  5. Pour the creamy garlic-parmesan sauce evenly over the chicken and potatoes.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and the potatoes are easily pierced with a fork.
  7. About 15 minutes before serving, sprinkle the remaining parmesan cheese on top and cover until melted.
  8. Garnish with fresh parsley or more grated cheese if desired. Serve warm.

Notes

For extra flavor, sear the chicken breasts in a hot pan for 2-3 minutes per side before placing them in the crockpot. Use waxy potatoes like Yukon gold or baby potatoes to avoid mushiness. Taste the sauce halfway through cooking and adjust seasoning as needed.
