  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • For the Cinnamon Sugar Swirl:
  • 1/4 cup granulated sugar
  • 1 1/2 teaspoons ground cinnamon
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup unsalted butter, melted
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Make the streusel: In a medium bowl, stir together 1/2 cup flour, 1/4 cup brown sugar, 1/2 teaspoon cinnamon, and a pinch of salt. Pour in 1/4 cup melted butter and mix with a fork or your hands until crumbly. Set aside.
  3. Mix the cinnamon sugar: In a small bowl, combine 1/4 cup granulated sugar with 1 1/2 teaspoons cinnamon. Set aside.
  4. In a large mixing bowl, beat 1/2 cup softened butter, 2/3 cup sugar, and 1/4 cup brown sugar until light and fluffy (about 2-3 minutes).
  5. Beat in 1 egg, then mix in 1/4 cup sour cream and 1 1/2 teaspoons vanilla extract. The dough may look a little curdled.
  6. In a separate bowl, whisk together 1 3/4 cups flour, 1/2 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt. Gradually add to the wet mixture, mixing just until combined.
  7. Using a cookie scoop or tablespoon, drop 2-tablespoon balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Make a shallow indent in the center of each dough mound.
  8. Sprinkle about 1/2 teaspoon of the cinnamon sugar mixture into the indent of each cookie.
  9. Generously pile streusel over each cookie, pressing it lightly so it sticks.
  10. Bake for 10-12 minutes, or until the edges are just set and the tops look slightly underdone. The cookies should be pale golden at the edges.
  11. Let the cookies sit on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For gluten-free cookies, use a 1:1 gluten-free flour blend. For dairy-free, substitute vegan butter and coconut yogurt. Chill dough for 10 minutes if sticky. Streusel can be made chunkier by mixing with fingers. Store cookies in an airtight container for 2-3 days or freeze for up to 2 months.
