  • 1/4 tsp ground nutmeg
  • 1/8 tsp ground cloves (optional)
  • Pinch of black pepper (optional)
  • 1/3 cup white chocolate chips (for drizzling or melting)
  • Festive sprinkles, gumdrops, or mini gingerbread men candies (optional for decoration)

Instructions

  1. Line a 9×13-inch baking pan with parchment or wax paper, leaving overhang for easy lifting. Lightly butter the paper.
  2. In a large saucepan over medium-low heat, melt the butter until fully melted and slightly nutty, about 2 minutes.
  3. Add mini marshmallows and stir continuously until melted and gooey, about 3-4 minutes. Lower heat if sticking.
  4. Stir in molasses, ginger, cinnamon, nutmeg, clove (if using), and black pepper (if using). Mix until combined and caramel-brown, about 1 minute.
  5. Turn off the heat and quickly fold in Rice Krispies cereal. Stir until evenly coated.
  6. Transfer mixture to prepared pan. Use a buttered spatula, wax paper, or damp hands to press evenly into corners. Press gently for airy treats.
  7. Let cool for 10-15 minutes at room temperature.
  8. Melt white chocolate chips in a microwave-safe bowl (30-second intervals, stirring between each). Drizzle over cooled treats and decorate with sprinkles or candies.
  9. Cut into squares (about 24 pieces) using a sharp knife or bench scraper. Wipe knife between cuts for clean edges.
  10. Serve immediately or store in an airtight container at room temperature for up to 4 days.
