  • 2 tablespoons olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 can (14.5 ounces) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) black beans, drained and rinsed
  • 2 cups beef broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1/4 teaspoon cayenne pepper
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, chopped green onions, tortilla chips

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.
  2. Add the diced onion and cook for 3-4 minutes until softened and translucent.
  3. Add the minced garlic and sauté for another 30 seconds, stirring frequently to prevent burning.
  4. Add the ground beef to the pot, breaking it up with a wooden spoon. Cook for about 5-7 minutes until browned. Drain any excess fat if needed.
  5. Stir in the chili powder, cumin, smoked paprika, oregano, cayenne pepper, salt, and pepper. Cook for 1-2 minutes to toast the spices and enhance their flavor.
  6. Add the canned diced tomatoes, tomato paste, drained beans, and beef broth to the pot. Stir until everything is well combined.
  7. Bring the chili to a gentle boil, then reduce the heat to low and let it simmer uncovered for 30 minutes, stirring occasionally.
  8. Taste and adjust the seasoning if needed. If you prefer a thicker chili, let it simmer for an additional 10-15 minutes.
  9. Serve hot with your favorite toppings like shredded cheese, sour cream, or green onions.

Notes

Toast the spices before adding liquids for enhanced flavor. Adjust the spice level by modifying the cayenne pepper. Chili flavors deepen over time, making it even better the next day.
