  • 4 medium-sized sweet potatoes, peeled and sliced into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh rosemary, chopped finely
  • 1 tablespoon fresh thyme
  • 1 cup ricotta cheese (full-fat or part-skim)
  • 1 teaspoon lemon zest
  • 1 clove garlic, minced or grated
  • 1 tablespoon chives, finely chopped (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the sweet potato wedges with olive oil, salt, black pepper, rosemary, and thyme.
  3. Spread the seasoned sweet potatoes evenly on the baking sheet, ensuring they don’t overlap. Roast for 25-30 minutes, flipping halfway through, until golden brown and tender.
  4. While the potatoes roast, prepare the herbed ricotta. In a mixing bowl, combine ricotta cheese, lemon zest, garlic, and a pinch of salt and pepper. Stir until smooth and creamy.
  5. Once the sweet potatoes are done, remove them from the oven and allow them to cool slightly.
  6. Arrange the potatoes on a serving platter and dollop the herbed ricotta on top. Garnish with chopped chives if desired.
  7. Serve warm or at room temperature and enjoy!
