Homemade Cheeseburger Soup

A creamy, hearty soup that combines the flavors of a classic cheeseburger with simple, pantry-friendly ingredients. Perfect for cozy dinners or entertaining guests.

  • 1 lb lean ground beef
  • 1 onion, finely chopped
  • 2 carrots, shredded or diced
  • 2 celery stalks, diced
  • 4 potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 tablespoon butter
  • 2 tablespoons flour
  • Salt, to taste
  • Pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika

Instructions

  1. In a large pot or Dutch oven, melt 1 tablespoon of butter over medium heat. Add the ground beef and cook until browned, breaking it up with a wooden spoon. Remove the beef and set aside, leaving the drippings in the pot.
  2. Add the chopped onion, celery, and carrots to the pot. Sauté for 4–5 minutes until softened.
  3. Sprinkle 2 tablespoons of flour into the pot and stir to coat the vegetables evenly. Cook for 1 minute to remove the raw flavor of the flour.
  4. Gradually pour in 4 cups of chicken broth while stirring, ensuring no lumps remain.
  5. Add the diced potatoes and bring the mixture to a simmer. Cook for 10–12 minutes, or until the potatoes are tender.
  6. Return the cooked ground beef to the pot and stir to combine.
  7. Reduce the heat to low and pour in 1 cup of whole milk, stirring gently. Let the soup heat through for 3–4 minutes.
  8. Gradually stir in 2 cups of shredded cheddar cheese until melted and smooth.
  9. Season with salt, pepper, garlic powder, and paprika to taste.
  10. Serve hot with your favorite toppings, like crumbled bacon, chopped green onions, or extra cheese.
