  • 2 tablespoons rice vinegar
  • 1 teaspoon sesame oil (optional)
  • 1/4 cup water
  • 1 tablespoon cornstarch
  • 2 tablespoons water (for cornstarch slurry)
  • Pinch of red pepper flakes (optional)

Instructions

  1. In a mixing bowl, whisk together honey, soy sauce, minced garlic, grated ginger, rice vinegar, sesame oil (optional), and water. Add a pinch of red pepper flakes if desired.
  2. Place chicken thighs in the crock pot, ensuring they are evenly spaced.
  3. Pour the honey garlic sauce over the chicken thighs, ensuring each piece is coated.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and fully cooked (internal temperature of 165°F/74°C).
  5. If you prefer a thicker glaze, remove the chicken and transfer the sauce to a small saucepan. Mix cornstarch with water to create a slurry, then whisk into the sauce. Heat over medium heat until thickened.
