  • Water, as needed to thin the peanut sauce

Instructions

  1. Trim excess fat from chicken thighs and cut into 1.5-inch chunks. Place in a bowl.
  2. Whisk together 1/4 cup soy sauce, 3 tablespoons honey, minced garlic, and grated ginger. Pour over chicken and toss to coat. Cover and refrigerate for at least 30 minutes, ideally 1-2 hours.
  3. Whisk together peanut butter, 2 tablespoons soy sauce, 1 tablespoon honey, rice vinegar, and chili garlic sauce in a small bowl. Add water 1 teaspoon at a time to reach a smooth, dippable consistency. Cover and set aside.
  4. Thread marinated chicken pieces onto skewers, leaving space between pieces.
  5. Preheat grill or grill pan to medium-high heat (about 400°F). Lightly oil grates or pan.
  6. Grill skewers for 4-5 minutes per side until caramelized and internal temperature reaches 165°F.
  7. Remove skewers and let rest for 5 minutes. Serve warm with peanut sauce for dipping.
