A creamy, velvety soup brimming with pillowy gnocchi, crispy bits of smoky bacon, and a rich cheddar cheese base that warms you from the inside out. Perfect for a cozy dinner or a cold winter night.

Ingredients

  • Thick-cut bacon, chopped into bite-sized pieces
  • Store-bought potato gnocchi or homemade
  • Sharp cheddar cheese, grated
  • Chicken broth (or vegetable broth for vegetarian option)
  • Heavy cream (or half-and-half for a lighter option)
  • Onion, chopped
  • Garlic, minced
  • Unsalted butter
  • Flour
  • Salt
  • Pepper
  • Optional: Green onions for garnish
  • Optional: Paprika or cayenne for spice

Instructions

  1. Cook the bacon: In a large pot over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Remove with a slotted spoon and set aside on a paper towel-lined plate to drain.
  2. Sauté the vegetables: In the same pot, add the chopped onion and minced garlic. Cook in the rendered bacon fat until the onion becomes translucent and fragrant, about 3-4 minutes.
  3. Make the roux: Add the butter to the pot and let it melt. Stir in the flour and cook for 1-2 minutes, whisking constantly to eliminate lumps.
  4. Add the liquid: Slowly pour in the chicken broth, whisking continuously to prevent lumps. Bring the mixture to a gentle boil and let it simmer for 5 minutes to thicken.
  5. Add the gnocchi: Stir in the gnocchi and let them cook for about 3-5 minutes, until they float to the top.
  6. Finish with cheese and cream: Lower the heat and add the grated cheddar cheese, stirring until fully melted. Pour in the heavy cream and mix well until the soup reaches a creamy consistency.
  7. Season: Add salt and pepper to taste. You can also sprinkle in some paprika or cayenne if you like a little heat.
  8. Garnish and serve: Ladle the soup into bowls, top with crispy bacon bits, chopped green onions, and an extra sprinkle of cheddar cheese if desired.
