  • 1 packet (2 tablespoons) ranch seasoning mix
  • 1 ½ cups shredded sharp cheddar cheese
  • 8 strips bacon, cooked crispy and crumbled
  • ¼ cup green onions, finely chopped
  • 2 tablespoons parsley, finely chopped (optional)
  • ½ cup chopped pecans (or substitute with crushed crackers)

Instructions

  1. Cook the bacon until crispy, then crumble it into small bits. Finely chop the green onions and parsley, and shred the cheddar cheese if it’s not pre-shredded.
  2. In a large mixing bowl, combine the softened cream cheese and ranch seasoning. Mix until smooth and creamy.
  3. Stir in the shredded cheddar, crumbled bacon, green onions, and parsley. Mix well to ensure everything is evenly distributed.
  4. Cover the mixing bowl with plastic wrap and refrigerate for at least 1 hour.
  5. Spread the chopped pecans (or your chosen coating) on a plate or shallow dish. Add the reserved bacon bits for extra flavor.
  6. Using a small ice cream scoop or tablespoon, scoop out portions of the chilled cheese mixture and roll them into balls with your hands.
  7. Roll each cheeseball in the pecans and bacon mixture until fully coated. Place them on a serving plate or tray.
  8. If not serving immediately, cover the cheeseballs and refrigerate until ready to serve. They’ll keep well for up to 3 days.

Notes

Ensure cream cheese is softened before mixing to avoid lumps. Chill the mixture before rolling to make it easier to shape. Customize the coating with crushed pretzels, sesame seeds, or shredded cheese for variety.
