A vibrant Bruschetta Dip filled with juicy tomatoes, fresh basil, and a hint of garlic paired with crispy baguette slices or crunchy pita chips. It’s a crowd-pleaser, packed with flavor, and incredibly easy to whip up.

  • 45 medium-sized Roma tomatoes, diced
  • 1/2 cup fresh basil, chopped
  • 23 cloves garlic, minced
  • 1/4 cup red onion, finely chopped (optional)
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • Parmesan cheese (optional)
  • Baguette slices or pita chips for serving

Instructions

  1. Dice the Roma tomatoes into small, even cubes and place them in a mixing bowl.
  2. Wash and dry the basil leaves thoroughly, then chop them finely. Add to the bowl with the tomatoes.
  3. Peel and mince the garlic cloves. Use the side of your knife to smash them slightly before chopping for maximum flavor. Toss into the bowl.
  4. If using red onion, finely dice 1/4 cup and mix it in. Skip this step if not using.
  5. Drizzle the olive oil and balsamic vinegar over the mixture. Sprinkle with salt and pepper to taste. Stir gently to combine without bruising the tomatoes or basil.
  6. If using Parmesan cheese, grate a small amount and mix it in for a touch of richness.
  7. Slice a baguette into thin rounds and toast them in the oven at 375°F (190°C) for 6-8 minutes, flipping halfway through. Alternatively, use ready-made pita chips or fresh veggies.
  8. Transfer the bruschetta dip to your serving bowl and arrange the dippers around it. Garnish with a few whole basil leaves for a pop of color.
