  • 2 boneless, skinless chicken breasts, sliced into thin strips
  • 8 ounces linguine
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Fresh parsley, optional for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. In a bowl, toss the chicken strips with Cajun seasoning, salt, and pepper until evenly coated.
  3. Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side, until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  4. In the same skillet, melt another tablespoon of butter. Add minced garlic and sauté for 30 seconds until fragrant.
  5. Lower the heat to medium, pour in the heavy cream, and stir gently. Add the grated Parmesan cheese and whisk until the sauce is smooth and creamy. If too thick, add a splash of reserved pasta water.
  6. Add the cooked linguine to the skillet and toss to coat evenly in the sauce. Fold in the chicken strips and mix well.
  7. Sprinkle with fresh parsley, additional Parmesan, and a pinch of Cajun seasoning for extra flavor. Serve immediately.

Notes

Reserve pasta water to adjust sauce consistency. Taste the sauce before serving and adjust seasoning as needed. Let the chicken rest after cooking to retain juices.
