  • 1 lb smoked sausage, sliced into rounds (e.g., Andouille sausage)
  • 12 oz penne pasta (or any short pasta like rotini or rigatoni)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced (yellow or white)
  • 2 tbsp Cajun seasoning (adjust to taste)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup Parmesan cheese, freshly grated
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh baby spinach
  • Salt and pepper to taste
  • Optional: hot sauce for extra heat

Instructions

  1. Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package directions until al dente. Drain and set aside.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sliced smoked sausage and cook for 3-4 minutes, stirring occasionally, until browned and slightly crispy. Remove the sausage and set aside.
  3. In the same skillet, add another tablespoon of olive oil if needed. Toss in the diced onion and minced garlic. Cook for about 2-3 minutes until fragrant and the onions are translucent.
  4. Sprinkle the Cajun seasoning over the onions and garlic. Stir well to coat the aromatics evenly and allow the spices to bloom for about 30 seconds.
  5. Pour in the chicken broth and heavy cream. Stir well and bring the mixture to a gentle simmer. Reduce the heat to medium-low and let the sauce thicken for about 5 minutes.
  6. Stir in the grated Parmesan cheese until fully melted and incorporated into the sauce. Add the cherry tomatoes and spinach, stirring gently until the spinach wilts.
  7. Return the cooked sausage to the skillet and add the drained pasta. Toss everything together until well-coated in the creamy Cajun sauce.
  8. Taste the pasta and adjust the seasoning with salt and pepper. If you like it spicier, add a splash of hot sauce.
