Irresistible Chicken Rice Casserole

  • 2 cups cooked chicken, shredded or diced
  • 2 cups cooked white rice
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 1/2 cup chicken broth
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Optional: breadcrumbs for topping
  • Optional: chopped fresh parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the cooked chicken, cooked rice, cream of mushroom soup, sour cream, shredded cheddar cheese, mixed vegetables, chicken broth, onion powder, garlic powder, salt, and pepper. Mix until everything is evenly incorporated.
  3. Transfer the mixture into a greased 9×13-inch baking dish, spreading it out evenly.
  4. If desired, sprinkle breadcrumbs over the top for added texture.
  5. Cover the baking dish with aluminum foil and bake for 25 minutes.
  6. Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  7. Let the casserole cool for 5 minutes before serving. Enjoy warm!
