  • 3 tbsp freshly squeezed lime juice
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp honey (optional)
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • Salt and pepper, to taste
  • 1 cup white rice (or brown rice)
  • 2 cups low-sodium chicken broth
  • 1 tbsp butter
  • 1/3 cup fresh cilantro, chopped
  • 2 tbsp lime juice
  • Salt, to taste
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • Extra cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Make the steak marinade: In a mixing bowl, whisk together lime juice, olive oil, minced garlic, honey, smoked paprika, cumin, salt, and pepper. Place the steak in a resealable bag or shallow dish, pour the marinade over it, and let it sit for at least 30 minutes or up to 8 hours in the refrigerator.
  2. Cook the rice: Rinse the rice under cold water until the water runs clear. In a medium saucepan, combine the rice, chicken broth, and butter. Bring to a boil, then reduce the heat to low and cover. Cook for about 15 minutes or until the rice is tender. Remove from heat, fluff with a fork, and stir in chopped cilantro, lime juice, and salt.
  3. Prepare the toppings: While the steak marinates and the rice cooks, rinse and chop the vegetables. Slice the avocado, halve the cherry tomatoes, and finely dice the red onion.
  4. Cook the steak: Heat a grill pan or skillet over medium-high heat. Remove the steak from the marinade, letting excess drip off, and place it on the hot pan. Cook for 4-5 minutes per side or until it reaches your desired level of doneness (135°F for medium-rare). Let the steak rest for 5 minutes before slicing thinly against the grain.
  5. Assemble the bowls: Start with a base of cilantro lime rice, then layer on the sliced steak, black beans, corn, avocado, cherry tomatoes, and red onion. Garnish with extra cilantro and serve with lime wedges on the side.
