  • 2 medium apples, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)
  • 1 ¾ cups (220g) all-purpose flour, sifted
  • ¾ cup (150g) granulated sugar
  • ¼ cup (50g) brown sugar
  • ½ cup (115g) unsalted butter, softened to room temperature
  • 2 large eggs, room temperature
  • ½ cup (120ml) whole milk
  • 2 teaspoons baking powder
  • 1 ½ teaspoons ground cinnamon
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.
  2. Peel, core, and dice the apples into small chunks. Set aside.
  3. In a medium bowl, sift together the flour, baking powder, cinnamon, and salt.
  4. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  5. Beat in the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Start and end with the dry ingredients. Mix until just combined.
  7. Gently fold the diced apples into the batter using a spatula.
  8. Pour the batter into the prepared pan and smooth the top. Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
