Soft, chewy blondies bursting with cinnamon-spice flavor and topped with a crackly cinnamon sugar crust—perfect for fall gatherings or cozy evenings.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 1/2 cups brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar (for topping)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper, leaving overhang on the sides for easy lifting.
  2. In a large mixing bowl, whisk together the melted butter, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and glossy.
  3. In a separate bowl, sift together the flour, baking powder, ground cinnamon, and salt to ensure even distribution.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula until just combined. Avoid overmixing.
  5. Spread the batter evenly in the prepared pan, smoothing the top with a spatula.
  6. Sprinkle the cinnamon sugar mixture (1/4 cup granulated sugar and 1 teaspoon cinnamon) evenly over the batter.
  7. Bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Let the blondies cool completely in the pan before lifting them out using the parchment paper. Slice into squares and enjoy.
