  • 2 large eggs, whisked
  • 1 cup freshly grated parmesan cheese

  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in a large mixing bowl or zip-top bag and pour in the dill pickle juice. Ensure the chicken is fully submerged. Cover and refrigerate for at least 2 hours, or overnight for maximum flavor.
  2. Remove the chicken from the pickle juice and pat dry with paper towels.
  3. Set up your breading station: In one shallow bowl, whisk together the eggs. In another bowl, combine the flour, garlic powder, paprika, salt, and pepper. In a third bowl, mix the panko breadcrumbs and grated parmesan cheese.
  4. Heat a large skillet over medium heat and add enough cooking oil to coat the bottom of the pan.
  5. Dredge each chicken breast first in the flour mixture, then dip into the egg wash, and finally coat generously in the parmesan-panko mixture. Press the coating onto the chicken to ensure it sticks.
  6. Carefully place the coated chicken into the hot skillet. Cook for 4-5 minutes per side, or until golden brown and the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the skillet and place it on a paper towel-lined plate to drain excess oil.
