  • 1 lb ground beef (80% lean)
  • 1 lb ground pork (optional)
  • 1 cup breadcrumbs (Panko)
  • 1 large egg (beaten)
  • 1/2 cup milk
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded mozzarella cheese
  • 2 lbs Yukon gold potatoes (peeled and cubed)
  • 1/4 cup milk (warm)
  • 4 tbsp unsalted butter (softened)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and lightly grease your loaf pan or baking sheet.
  2. In a large bowl, combine the ground beef, ground pork, breadcrumbs, beaten egg, milk, onion, garlic, ketchup, Worcestershire sauce, thyme, salt, and pepper. Mix gently until evenly combined.
  3. Transfer half of the meat mixture to the loaf pan or shape it into a rectangular loaf on a baking sheet.
  4. Create a shallow well in the middle of the meatloaf and fill it with shredded mozzarella cheese. Cover the cheese with the remaining meat mixture, sealing it in completely.
  5. Spread a generous layer of ketchup over the top of the meatloaf.
  6. Cover the meatloaf loosely with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 25-30 minutes, or until the internal temperature reaches 160°F (71°C).
  7. While the meatloaf is baking, boil the potatoes in a large pot of salted water until fork-tender (about 15 minutes). Drain and return to the pot.
  8. Add warm milk, butter, garlic powder, salt, and pepper to the potatoes. Mash until smooth and creamy.
  9. Slice the meatloaf and serve with mashed potatoes on the side. Garnish with fresh parsley if desired.
