Ingredients

Scale
  • 1.5 lbs beef sirloin or flank steak, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1/4 cup soy sauce
  • 1 cup beef broth
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 2 tablespoons brown sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Optional: crushed red pepper flakes, sesame seeds, fresh scallions

Instructions

  1. Thinly slice the beef sirloin or flank steak into strips, about 1/4 inch thick. Season with salt and pepper.
  2. Slice the bell peppers and onion into thin strips. Mince the garlic and grate the ginger.
  3. Heat 1 tablespoon of vegetable oil in a skillet over medium-high heat. Sear the steak strips for about 2 minutes per side until browned but not fully cooked.
  4. In a bowl, whisk together soy sauce, beef broth, brown sugar, garlic, and ginger. Add cornstarch and mix until smooth.
  5. Place the sliced onions at the bottom of the crock pot. Add the seared steak on top, followed by the bell peppers.
  6. Pour the prepared sauce over the steak and vegetables, ensuring everything is evenly coated.
  7. Cover and cook on low heat for 6-7 hours or on high for 3-4 hours. The steak should be tender, and the sauce thickened.
  8. Stir the ingredients together before serving. Garnish with sesame seeds and scallions if desired. Serve hot over steamed rice or noodles.

Notes

[‘Searing the steak before slow cooking enhances flavor and locks in juices.’, ‘Slice the steak against the grain for tender bites.’, ‘Taste the sauce before adding to the crock pot and adjust seasoning as needed.’, ‘Add bell peppers later in the cooking process to keep them slightly crisp.’, ‘If the sauce is too thin, use a cornstarch slurry to thicken it.’]
