Ingredients

  • Thick slices of sourdough or hearty bread (gluten-free bread optional)
  • Unsalted butter, softened
  • Mozzarella cheese, grated or sliced thinly
  • Sharp cheddar cheese, grated or sliced thinly
  • Homemade or store-bought basil pesto
  • Optional: Tomato slices, avocado, or fresh spinach

Instructions

  1. Slice the bread into thick slices if it isn’t already, and prepare cheese by grating or slicing thinly.
  2. Spread a generous layer of softened butter on one side of each slice of bread.
  3. Flip the bread over and spread a thin layer of pesto on the other side of each slice.
  4. Layer the cheese on top of the pesto side of one slice of bread. Add optional ingredients like tomato slices or spinach if desired.
  5. Top with the second slice of bread, pesto side facing the cheese, and press lightly.
  6. Preheat a non-stick skillet or griddle over medium heat. Place the sandwich on the pan, buttered side down, and cook for 3-4 minutes on each side, or until the bread is golden and crispy and the cheese is fully melted.
  7. Carefully flip the sandwich using a spatula. Lower the heat if the bread browns too quickly to ensure the cheese melts.
  8. Once both sides are golden and the cheese is melted, remove the sandwich from the pan and let it cool for a minute before slicing.
  9. Serve immediately and enjoy.

Notes

Use room temperature cheese for even melting. Cook on medium heat to avoid burning the bread. Experiment with variations like adding tomato slices, avocado, or protein such as chicken or bacon.
