Ingredients

Scale
  • 1 cup almond flour (or substitute with gluten-free all-purpose flour)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dried oregano
  • 1 large egg
  • 1/4 cup grated Parmesan cheese (optional)
  • 1 cup cottage cheese (small curd works best)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup pizza sauce
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • Sliced black olives (optional)
  • Diced bell peppers (optional)
  • Sliced mushrooms (optional)
  • Turkey pepperoni (optional)
  • Fresh basil leaves (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease your baking dish with olive oil or non-stick spray.
  2. In a medium mixing bowl, whisk together almond flour, baking powder, garlic powder, and dried oregano. Beat in the egg and grated Parmesan cheese until a dough-like mixture forms. Press the dough evenly into the bottom of your greased baking dish.
  3. Bake the base for 10-12 minutes, or until it’s slightly golden and firm to the touch. Remove from the oven and let it cool for 5 minutes.
  4. In another mixing bowl, combine cottage cheese, shredded mozzarella cheese, grated Parmesan cheese, pizza sauce, dried basil, and dried oregano. Add a pinch of salt and pepper, then mix well.
  5. Spread the filling evenly over the pre-baked base. Sprinkle additional shredded mozzarella on top, if desired.
  6. Customize your bake with your favorite toppings, such as sliced olives, diced bell peppers, mushrooms, or turkey pepperoni. Sprinkle a few fresh basil leaves for a pop of flavor.
  7. Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 8-10 minutes, or until the cheese is bubbly and golden.
  8. Let the bake rest for 5-10 minutes before serving. Slice into squares and enjoy!

Notes

[‘Use high-quality small-curd cottage cheese for a smoother texture.’, ‘Pre-bake the base to ensure it holds up under the filling.’, ‘Drain excess liquid from toppings like mushrooms or frozen vegetables.’, ‘Add red pepper flakes for heat or extra garlic powder for flavor.’, ‘Keep an eye on the bake during the uncovered stage to avoid scorching the cheese.’]
